Gingerbread Latte

This latte has all the deep, spiced sweetness of gingerbread in a hot, cozy drink. Molasses brings a rich, caramel-like flavor, while our Gingerbread Spice does all the heavy lifting! You don’t need fresh ginger or a bunch of whole spices. Whip up a batch of syrup to keep in the fridge for whenever a gingerbread latte craving strikes, or, if you prefer a quicker version, scroll to the end for our easy shortcut.

Ingredients

FOR THE GINGERBREAD SYRUP (makes about 250 ml)
  • ½ cup brown sugar
  • ¼ cup molasses
  • ⅓ cup water
  • 1 tablespoon + ½ teaspoon Gingerbread Spice

FOR ONE LATTE
  • 300 ml milk of choice
  • 1 shot espresso
  • 2 tablespoons gingerbread syrup (recipe above)
  • Ground cinnamon or marshmallow fluff, for garnish (optional)

FOR A QUICK GINGERBREAD LATTE
  • 300 ml oat milk
  • 1 tablespoon molasses
  • 1 tablespoon Gingerbread Spice
  • 20 g brown sugar
  • 1 shot espresso
  • Pinch of salt
  • Ground Peni Miris Cinnamon or whipped cream, for garnish (optional)

Methods

FOR THE GINGERBREAD SYRUP
  1. Add the brown sugar, molasses, water, and Gingerbread Spice to a saucepan. Bring to a boil over medium heat, stirring occasionally to help the sugar dissolve and the ingredients combine, about 10 minutes.
  2. The syrup should be relatively thin at this stage; it will thicken as it cools. Remove from the heat and let cool for 15–20 minutes, then transfer to an airtight jar. Store in the refrigerator for up to 1 month.

FOR ONE LATTE
  1. Heat the milk in a small saucepan over medium heat until it reaches a gentle simmer, or steam it using a milk steamer. Pour into your favorite mug.
  2. Pull a shot of espresso and pour it into the mug. Add the gingerbread syrup and stir well to combine.
  3. Finish with a dusting of ground cinnamon or a dollop of marshmallow fluff, if using.

FOR A QUICK GINGERBREAD LATTE
  1. Add 300ml milk of choice, 1 Tbsp molasses, 1 Tbsp Gingerbread Spice, and 20g brown sugar to a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar and spice blend. Continue stirring gently for 4–5 minutes.
  2. Remove from the heat and pour into your favorite mug. Pull a shot of espresso and add it to the mug, along with a pinch of salt. Stir well to combine.
  3. Finish with a dusting of ground cinnamon or a dollop of whipped cream or marshmallow fluff.
