Cooking Tips

Whip up an easy marinade.

Stir ½ cup plain yogurt with 2 tablespoons Curry Powder, 1 tablespoon lemon juice, and 1 teaspoon Surya Salt. Toss with chicken, shrimp, fish, or veggies before grilling or roasting.

Saucy mussels.

Sauté 2 chopped shallots in butter, stir in 1 tablespoon Curry Powder, splash in a light lager or dry cider, then add 2 pounds mussels. Steam until they open, then finish with crème fraîche and a squeeze of lemon.

Zhuzh up mayo.

Stir into mayo, aioli, or creamy dressings for an instant flavor boost.

What is curry, really?

Curry actually isn’t just one thing. British colonizers in India took hundreds of wildly different South Asian dishes: karis, qormas, dals, sabzis, kadhis and lumped them all under one simple, generic name: curry.

In the 18th century, the British commercialised what they called "Madras curry powder," despite the fact that this blend had no real connection to Madras and nothing quite like it existed in India at the time. It caught on across the British empire and eventually became a pantry staple far beyond where it started!

What makes this different from other curry powders?

Most grocery store curry powders are one-note and based on a simplified, colonial-era recipe that completely flattens out flavor. Our Curry Powder is made with fresh, single-origin spices and is earthy from turmeric, cumin, and ginger, bright from coriander and fennel and deeply umami from garlic. This isn’t a shortcut blend, but a modern-day, flavor-packed upgrade.

So why make a curry powder at all, if it's not really "authentic"?

Curry powder has been our most requested blend ever since we launched. As an Indian who grew up in India, our founder had a complicated relationship with the term but after asking our amazing community about their own connections to curry powder, it became clear that the spice blend tells a bigger story about migration, adaptation, and identity. Several diaspora communities across the world, from Japan to Jamaica, have made curry powder their own over the years. Our Curry Powder acknowledges that history instead of erasing it.

What's in it?

Diaspora Spice Co.'s Curry Powder includes coriander, turmeric, cumin, fennel, garlic, chilli powder, ginger, black pepper, salt, fenugreek, and curry leaves.

How do I use it?

Curry Powder is so versatile! Great for curries, stews, roasted vegetables, marinades, and soups. You can use it in recipes where you want a deep, well-rounded warmth without starting from scratch with individual spices.

How much Curry Powder do I use at a time?

A good starting point is about 1 tsp of Curry Powder, though the exact amount really depends on the recipe you're making and how bold you want the flavor to come through. Feel free to adjust to taste as you go!

Is it spicy?

Our Curry Powder includes chilli powder and black pepper for warmth but it's built to be flavor-forward rather than heat-forward! There's more umami than fire.

How much salt is in it?

The salt content in our curry powder is about 0.03g per serving, keeping this blend fairly light on sodium while still leaving room to season further to taste, depending on the dish!

How should I store it?

Store your Curry Powder in a cool, dry place away from direct sunlight, ideally in an airtight container, to preserve its freshness and flavor over time. No refrigeration needed.

What is the best way to store the spices?

Store them in an airtight container in a dark, dry place. Do not store spices in direct sunlight, as this will shorten their shelf life.

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.
